Help with Mac Mail

I finally got rid of Eudora and have questions about Mac Mail:

1. How do I manage the mailboxes--for instance, I want to read and delete but that putting delete moves it to a folder I have created called "read mail" (as in past participle, mail that I have read that I do not wish to dump)

2. imap vs pop? does this help with the creation of mailboxes?
