Help with restore from backup

I wanted to do a restore from backup, from a backup made Friday 8/6, but that backup is not listed in iTunes. Does anyone have a suggestion relative to finding a backup that was made, but is not listed in iTunes?

There were backups from June (after the upgrade) and then from when my phone synced when I plugged it in this morning, but nothing in between, even though I synced and backed up numerous times, specifically on Friday.
