I will be going to see a used 24" iMac (mid-2007 model) that I am interested in buying.

Any tips on things that I should look for when testing and checking out the machine to verify that it is in proper order?

I would search the iMac forums for issues relating to an uneven screen and such. I would just check the screen and check for dead pixels. Perhaps have the seller run a hardware check and show you that things are in order and also have the seller do a "verify disk" so that you can see if the hard drive is about to fail.

In other words, turn it on and take it for a spin. Short of that, I'm not sure there's much more you can do.
 
check for uneven color, run a hardware test to make sure nothing failed.
check serial number against apple database to see if it still has applecare or eligable to renew.
check in about this mac to make sure wireless and bluetooth are present, check graphics card, hard drive and ram
