I thought I read this was something you could set up in accessibility in older watches. If so, has anyone done it?
 
I assumed you meant Back Tap. There are options to double or triple tap the back of the device.

i have tried the double tap gesture that can be set up through the Accessibility settings.
i have the Series 8, running WatchOS 10.0.1)
i only spent about 10 minutes with it, but couldn't get it to get work reliably.
and, the actual gesture that was needed in order to get it to work required a very determined (exaggerated) kind of double tap that was tiring.
i think if i spent more time with it i could have gotten better at it.
for the above reasons, and, given the learning curve required to understand what double tap would do for each app at a given time, made me give it up.

but it made me think that the marketing claims by apple that the Series 9 is faster (processor speed) is probably correct.

Quick Actions is the setting that is nearly analogous with Double Tap. AssistiveTouch is a more involved setting that attempts to allow the user to navigate the entire UI with one hand and uses multiple gestures (clenches and taps). It’s helpful, but very slow and finicky.

Turning on Quick Actions only (Accessibility -> Quick Actions) allows you to dismiss notification, pause timers and music, answer and end calls, and more with the double tap gesture. About the only thing it won’t do is bring up the Smart Stack.

I’ve been using Quick Actions=ON with Appearance=minimal for a month or so and it works pretty seamlessly on my AW7.

What the post above says. From what we’ve seen so far double tap functions similar to Quick Actions double pinch.
