I use my MBP to connect to remote servers frequently as shown below. Will these connections be even smaller when using the hi-res screen?

As you can see the text and format is already quite small. Honestly I do not want to be changing options every time as the servers don't save that information.

However the hi res would be really nice for looking at large data sets with the extra real estate.

Main question - will the hi res make my remote server desktops and text ridiculously small?

it's got more to do with your VNC software than with the MBP itself. If your software can do upscaling you'll be fine, if it can't and sets the virtual display to match the window's size 1:1 then you'd have to change softwares.
This won't be a hardware issue but a mere software issue.
 
There are really no other software options. These software options are set up through the University I work for and other connection clients will not work.
