All USB-C Hubs seem to have this quirky 5 cm cable from the hub so the hub needs to be right next to the Mac. If there was a high quality female-to-female adapter I could buy another Apple USB-C cable so I only had one cable on my desk.

Has anyone had success with such an adaptor with charging, USB-A and HDMI still working?

This is a hit and miss arrangement; it may work better with an extension cord USB-C female to USB-C male rather than placing an adapter between the dock and the extension cord (in order to reduce the number of connections).

I've tried with an Anker 5-1 USB-c dock and it could drive just about the HDMI and the USB-A ports but it was fairly unstable, and decided against using it.

If it is for a desktop setup, I would suggest looking for a TB3 dock rather than investing in things with a high probability of not working. You can buy a Startech or Belking TB3 dock for about $100 any more.
