I have quite a nice wallpaper on my iPad and would like to hide the apps, is this possible to do?

Hide, no. Move, hell yes.

What you can do in iTunes is move all of your homescreen apps to the second page leaving only your dock visible. You wallpaper will then be shown like you want it to.

This is an iPhone, but you get the idea.

I was just waiting for a 'breaker to come in and say that. :D I try to help without jailbreaking first and then go from there.
 
It looks like you've never synced your apps before, so I'd just try to move them manually. I can't remember if iOS lets you manually, but you might as well give it a shot.

You can check the box that say "Sync Apps", but if you haven't ever synced them before iTunes will move them to your PC/Mac and you'll have to recopy them back to your iPad.
