Historic teams on console football games?

Where have these gone? I loved playing as past collee or NFL teams in NCAA football and Madden. However, for the 360 and PS3, I can not seem to figure out how to play as them. I remember them on the gamecube and xbox generation of games

What am i doing wrong? I need me some 98 Broncos and 95 Huskers lol

I found out they have teambuilder these days

However, one needs to be on EA servers

Is there any way to download teams with a game that isn't the current iteration? It seems EA likes to pull the plug on older versions for online support
