Canada, Eh?
since the original HD in most MBPs came with Hitachi HDs, would it be a good idea to use Hitachi's SSD?

I had upgraded my 13" 2010 MBP to a Hitachi 7200rpm 500GB hdd. Definitely better than the stock drive. But I was wondering, if I sacrifice some space for speed by going the SSD route, will I notice an improvement in not only boot and app launch times, but even web browsing? Or is that more dependent on the CPU speed and RAM?

Hitachi does not make SATA SSDs. There is no need or use to get the same brand drive. Hitachi is often classified as value brand, there are better ones out there.
