Why is the home app video quality always so poor but fine on the cameras native app? Anyone have any tips on fixing this ?

Home Home app video abysmal compared to cameras native app.

HomeKit video maxes out at 1080p regardless of what the camera supports. If you have a camera that supports 2K or 4K in its native app, then naturally the resolution will be better there.
My 2k cameras look "Okay" in Home app on my phone or iPad mini; I don't really notice the lower resolution. More visible in Home on my Mac, but still not horrible.
4k cameras would DEFINITELY suffer though.
