You can lock the orientation in portrait without jailbreaking.

Double tap the home button swipe over to the left here the iPod controls are and tap that little circular arrow button

I'm sure there is a Cydia tweak to allow landscape lock

I don't know of any but I would like to know if there is a way too.

there is a tweak called landscape lock rotation in cydia. I've never used it and am not sure its compatibility with IOS 5 but is an option for those of you that want it

Also another called RingerSwitchTool that lets you use the mute switch to lock orientation like you can on the iPad. Once again i've never used it so not sure of functionality
