Homekit is now uninstall the accessories and revert other accessories to previous changes. Anyone else with this problem?

Please elaborate a bit more.
I add a doorbell, a door lock and gate openers (all from different brands) and around 5 minutes after they disappear from HK. After this, all the changes made on smart outlets are reversed to what I had before the change were done.

Ok, that’s very odd. I’ve been using HomeKit since around 2018 and now with ~80 devices from different manufacturers and I’ve never seen this type of behavior. Have you tried reconnecting them to HomeKit yet?
 
Sounds like you have more than one iDevice logged into your iCloud account with HomeKit enabled, and one is overwriting the other in iCloud. That's not supposed to happen of course, but it can. Try signing out of iCloud on the other device(s) briefly or turn them off, then make your changes and see if it sticks.

Yes. but after a while happens again. However, I had an iPad in IOS 14.7. I've updated it to last iOS and waiting to see if it happens again

That's likely the culprit. I have a couple of iPads stuck on iOS 12.x and I've completely disabled HomeKit on them (Turned it off under iCloud in Settings > Profile).
