My 2 HomePods are driving me mad! When they work with Apple TV they are great and the sound is amazing but probably 1 in 3 times I ned to restart the HomePods so sound comes out of them through Apple TV even when that is the audio selection in Apple TV settings. Any suggestions please?

Are you doing default audio for the HomePods or selecting them in the AirPlay menu each time? If the former, try restarting the AppleTV.
 
a lot of airplay problems are related to network.

try rebooting your router and any other network gear.
If possible, try hard wiring the aTV to ethernet.

If you're using the router / wifi from your internet provider, take a look at some of the other newer options. A mesh option like Eero or orbi would be good, or even a netgear or d-link with upgraded wifi hardware and a more processing can help

even moving your current router can help, try to have it away from other electronics and things with large amounts of metal in them, and have as few obstacles like walls or furniture between the router and the HomePod.
