Airplay sharing is a complete mystery to me.

I live in a fairly dense housing unit, and I can see half a dozen "Apple TV"s when I look at my Airplay streaming options. I can not, for the life of me, find my own stereo Homepods.

I have all of my Homekit devices, including the Homepods, isolated on a separate router under a separate Apple ID. There are too many companion apps for all these little devices to feel comfortable giving access to my main home network, and I've set up an iPod touch as a system remote so guests can control the system without being given full access to the system (I don't have a Homekit door lock, but if I ever do it seems I can't let someone control the lights without also letting them control my locks).

From the iPod Touch on my guest network, I've setup the full Homekit network and the two Homepods as a stereo pair. I had trouble using the secondary guest network on my main router because I couldn't isolate guests from my main network without also isolating them from each other and stereo Homepods can't be isolated from each other, so I have a dedicated router controlling that guest network. From the master Apple ID which set up the Homekit network, I've invited a less privileged user that is the standard account I sign into the Touch with, and I've invited my personal account.

I can see the Homepods from both accounts on the Touch.

I can not see the Homepods as an Airplay destination from my personal account on my iPhone X.

My personal device is on the main network. In the Home app, from the master account on the Touch, I have "Allow Speaker and TV Access" set to "Everyone" with a password. The text below the options suggests that I don't need to be on the shared network to access the speakers. My personal account has also been granted remote access. I can see the Homepods and their settings from the Home app and no warnings are displayed. I can control all of the other accessories from the Home app from my personal account on my iPhone.

The other two options are "Anyone on the same network", which is explicitly not what I want, and "Only People Sharing this Home" which I think I would prefer but only these options aren't increasingly restrictive and I can stream from people sharing the home but not on the same network.

But, in any event, I can't stream from anything that isn't on that guest network.

Any ideas?
 
Just an update— if I split the stereo pair, I can see the two individuals as Airplay targets. It seems to be a problem specifically with the stereo setup.
