How? One of those ones that shoot the light onto a white surface. Do I need an adapter? What kind and how much?

it depends on how new your Air is and the type of projector. In your Air has MicroDvi, you will need one of these adapters:

From there, you may need another adapter depending on the projector's video inputs.

If your MacBook Air is newer and uses display port you will need the appropriate Mini Display Port adapters which I don't seem to be able to locate at the Apple Store.
