So I have an old backup of my iPhone 4 that has all my app save files. But I have been using my iPhone 5, which has all my contacts, emails, texts, and pictures I want. Is there any way I can get my save files back without having to restore my phone from that old backup (effectively losing all my texts and contacts)?

Through iTunes, unfortunately not. You can, however, try looking for third-party applications that allow you to extract certain data from an iPhone backup. All the ones I've found cost money though.

Good luck!

Yes. Install fresh versions of the apps you want the data from. Then use iFunbox and delete the "documents" and "library" folders in each app. Replace them with the old "documents" and "library" folders from your previous backup.
