I'm not sure if I posted this in the right place, but is Apple's expected delivery date accurate? I recently ordered a Macbook air with custom specs, and it hasn't changed from "processing order"

Generally accurate - can't think of any item I've ever ordered that was later than predicted, often they beat the prediction.
 
They're fairly accurate and as the shipping date gets closer you'll get an email that its been shipped.

More often then not, I've seen my orders leave on or before the estimated date and rarely after that date.

I ordered my 15"rmbp with a custom configuartion on Monday morning (I live in Chicago). This morning when I looked it went from processing order to preparing shipment. My delivery date is the 23-28th (I am really hoping the 23rd because I paid for 2 day shipment), but my guess is you'll see something a day or two after you place your order.
 
I've never had a problem with Apple's delivery dates. If it says delivery between (EXAMPLE) 05/20/2014 to 05/27/2014 i usually receive the item in the middle of the week.

I know thats not the best way to put it but what it comes down to is Apple is good at getting your items there on time
 
I've ordered lots of things from Apple online, and they've never been late. The last three times (iPhone 5s, MacBook Air 2013, iMac late 2013) the items arrived early.
