Is there any settings in any Mac email clients (I have Mail and Entourage) that when I forward a message onto someone, it will put the senders original email address as the reply-to address?

I forward so many emails to different people and majority of replies come back to me, instead of the original sender. I wish people would understand email!

Have you tried using the 'Redirect' function in Mail?
 
I have a solution for ya.

It involves "redirecting" email, rather than forwarding it. Quoting from Entourage 2004 help:

When you redirect a message instead of forwarding it, the name of the original sender appears in the From box, and your name does not appear in the message at all. You cannot change the subject or body of a redirected message.
1. In the Message list, click or open the message you want to redirect.
2. On the Message menu, click Redirect.
3. Address the message.
4. Send the message.

So you could either do this manually, or set a rule if a particular sender is consistently sending email to you in error.

That should do the trick? :)
 
If you Customize the toolbar on an incoming message, you can even get a Redirect button:
