We have a mac mini connected to a projector and I would like to make it easy and less steps as possible for people coming in to do presentations.

Is there a script or some software that will auto launch a powerpoint or keynote presentation from a usb device is plugged into it?

So it would launch the latest file. Trouble is the powerpoint will be save as .ppt instead of .pps so would be in editing mode not presentation.

And/Or is there a utility so I could just launch it only using the apple remote?
 
You can make a Keynote presentation autorun, ie go straight into Play, when you double click the file by choosing so in the Documents tab in the Inspector.
