Try Skyfire if you like the standard version of the websites you go to. It's not perfect, but I have a few sites I go to that I refuse to view with Safari now that I have this.
 
For this site? I don't recall that ever coming up on my iPad.

Well in my experience most mobile versions have a link to the regular site somewhere on the bottom of the page.

Also pretty much all third party browsers for iOS have the option to change the browser identification.

I usually use dolphin browser on my iPhone to get out of mobile mode for internet sites
 
What you're looking for is a way to change the user agent. Use a browser that allows you to do so or JB and use UserAgentFaker.

Either it doesn't have a mobile version or it doesn't recognize the user agent and defaults to the full site.
 
Use a different browser. One reason I use atomic rather than safari is that it lets you change the user agent to a desktop browser.
 
At the bottom of MacRumors, you'll see a line of text at the bottom that reads "To switch the full version, please Tap Here." Other sites should have similar methods.

Tap that and bam, you're good to go until your cookies expire or your clear your browsing history.

I was reading this wondering why no one had said this...I believe almost every mobile site I've ever seen has had a similar link at the bottom of the site.
