How can i have only my iphone apps on itunes

so i have a whole bunch of apps on my itunes but i just recently delete all the apps i dont use on my phone..how can i transfer all the apps on my phone to my apps in itunes..also my ipad apps are always syncing with my iphone and its annoying how can i change that
