Tahoe replaced the launcher with the Apps window. It's cluttered with a ton of iPhone apps I would never use on my Mac. I'd like to hide all the iPhone apps listed there. How can I do that?

Go to System Settings -> Spotlight -> Disable The "iPhone Apps" setting from the "Results From System" section.

I just did exactly the same thing. :)
 
I'm not sure when or how this was added as it wasn't there earlier, but there's now an option to show or hide iPhone apps in the Applications window. I'm finding that not all apps show up unless you search for them.
