Just wondering if anyone has any tips because every single time I go to most sites they revert to being the mobile version which is unusable. For some reason these web developers decide that people don't want to, err shouldn't be able to, pinch to zoom so it feels like every page is locked.

With a page loaded tap the address bar and swipe down on favorites menu that pops up you'll get a button to request the desktop version. It's also pretty common for 3rd party browsers to have a user agent option so you'll always get the desktop version of sites.

Nope it always reverts when I do that

Use Mercury Pro instead. It's butter smooth and you can select the user agent, pretending to be a regular desktop PC instead of a mobile device.
