iPhone 15 Pro How can I make the display turn off when I am sleeping?

I have never understood why my phone display sometimes turns off completely, but other times it will stay on for hours with the clock showing. I like my bedroom very dark as I sleep and my wireless charger doesn't work so well if I turn the phone face-down.

Is there a setting for this, or is it tied into Focus modes somehow? I like the always-on display most of the time but in a dark room, even the dim display with the clock casts a fair amount of light.

The Sleep Focus automatically forces the display off. You can also create a custom Focus and go under Filters to configure Always on Display to off while the Focus is active.
