So I returned a 15 inch MacBook and in the store ordered a 13 inch, but due to me passing my return time frame, the manager said he was willing to make an exception and give me the difference in a gift card.

I have no need for it; how can I safely sell it and where?
 
Safest way for both parties... Craigslist. Meet at the store, buy an item for the full amount of the gift card, then hand that item over with receipt to the buyer for cash. They can then return the item for a re-issued gift card immediately.

Personally, I just sold a $750 Apple gift card in the Marketplace in on MacRumors. I vet buyers before and request PayPal Gift payments.
 
Ah perfect. Well if you don't mind, can i message you for advice when the time comes? I'm going to post it on the forums.. How can I safely post proof that the card is of it's value? And when selling online, how can I be assured the person receives the item and doesn't try and backtrack me,

It's mostly that they will have to take your word for it. You can reveal the code yourself and check the balance and screenshot it (redact the identifying details, obviously). You'll have to decide whether you will ship the card or send just the details/pic along (which is what I did).

I assume you mean backstab you? Basically cheat you? You can't. It's a risk. That's why you only deal with people who have history. And if it's too much to swallow (the risk), then maybe doing a physical exchange at an Apple Store is better for you. I've done both.. nothing gives more peace of mind that cash in your hand (except that time I had $8K in cash and my counterfeit money pen indicated it was all counterfeit! Thankfully just a bad pen though.).
