How can I save/extract my Heart Rate info?

I’d love to be able to graph (myself) my heart rate data. Or at the very least place all of my heart rate data in my own spreadsheet. For both my doctor and myself.

If it makes a difference I use both the native Heart Rate app from my Watch and also the HeartWatch app which is amazing. I just don’t know how to extract this info and I feel bogged down being able to only watch this data on the Apple Health app.

Indeed, historical reports and comparison with past data provide a complete and detailed analysis of one's health.
