This one has be baffled. I subscribe to a lot of podcasts and don't have the time to listen to them all every week. They fill up my hard drive really fast. I would like to set iTunes to only keep the most recent two podcasts so I don't have to go in and manually remove old episodes for 20 different podcasts. I thought that this feature was included in earlier versions of iTunes but I can't seem to find it on iTunes 8.

Click on the Podcast
On the Bottome of the Window you will see Unsubscribe/Subscribe and a Settings button. Select Settings
Unselect the "Use Default Settings"
Change Episodes to keep to "Most Recent Episode" or what ever one you want.

That's it! Thanks for the help. I'm feeling a little dumb right now for not seeing that. Then again, seems like Apple has scattered the options for iTunes all over the place. So much for their focus on design and usability.
