I just want to see if its possible to make apps think I'm on a different macOS version than the one I'm on: the MacOS 14 beta. I've tried editing the file /System/Library/CoreServices/SystemVersion.plist but have gotten the "read only filesystem error."
 
Are you sure?
I think if you spoof the macOS version, and try to run an app that does not support the system, then you will not get a message telling you that the app does not support the system, BUT you will will get some other kind of error (because the app is not coded to support the system).
Your app may simply not be coded to support newer OS versions, or there is some other technical issue that prevents updating the app to support a newer macOS system.

Bottom line - Spoofing the system version won't change the fact that the app will not be coded for that system. (That kind of version change does NOT magically change the actual system, which remains an incompatible system, at least for that app) You just won't get the initial launch error, such as: "This app is not compatible with this system version", because it won't correctly know what version you are running, but may quickly report something else is wrong, such as the error you then get (read-only filesystem error), or some other system error.
If you have an app that you need to continue to use - then I suggest that you should stay with that older system that truly supports it.
Just curious, is this all about one particular app? (Which app?)
