How can I stop Mail suggesting old email addresses?

My brother seems to change his email a couple of times a year. At the moment he has a Gmail address (which is in my Address Book) but when I compose a new email in Apple Mail, it drags-up every email address he's ever had and I never know which is his current one.

How can I make Mail only use addresses in my Address Book rather than ones in my inbox?

At least on my aging system, there is an editable list under Window > Previous recipients.

Will this work for the iPhone? I hate it bringing up old addresses
