I don't know what "FW Umbrella" is, but if we don't upgrade our phones to 4.1 or whatever will stop us being able to jailbreak, are they able to prevent us from being able to jailbreak on 4.0.1 using star (jailbreakme.com)?

it's Apple's device, they can do whatever they want, and yes they will path the hole in mobile safari and possible others exploits to break and avoid current jailbreaks. Now the dev team and other members of the community have said before that they have more than one exploit and most of them are still present on 4.1 betas. so once Apple release 4.1 and jailbreakeMe.com is not more, they will release another tool (maybe no as easy as going to a website) that jailbreak he device and then Apple will path it again..and so on..
