I have the headphones that came with the 4s plugged in, but can't seem to activate Siri with the home button.

Does it not work with the them plugged in?

Hold down the middle button on the remote until you hear the 'beep-beep'

It should work OK. I have Klipsch headphones here and pressing and holding the function button for 2 seconds activates Siri. Pressing the home button for a second or two still activates it as well.

I didn't realise there was a button in the middle, just thought it was volume up/down.
Works fine.
