How do I back-up and restore my iPhone4 so I don't lose my folders, etc.

I have heard there are 2 different methods to backing up your phone for when you restore it. Reason I am asking is because last iOS upgrade I didn't back up my phone properly I guess and all my texts/recent calls were restored however all my folders were no longer there and I had some applications on my phone from before the restore, some were missing, and some apps were on my phone that I had deleted awhile ago.

Needless to say, I was so frusterated with all the effort I put in to organizing my folders that I didn't bother doing it again for fear of just losing them all again.

Anyone know the proper way to do this so my phone looks exactly the same as before when I restore from a backup? Thanks much appreciated :)

Just back it up in iTunes

And when your new phone arrives, restore from backup.

I've done it plenty of times and it has lost nothing in translation.
 
You can either just Sync with iTunes (iTunes will backup your device automatically) or you can manually create a backup.

For Manual, right click over your device and click on Backup.
