How do I backup iPad apps to my HDD?

I have read that Apple can remove apps from tha app store, even apps you've purchased?

Let's say I drop my iPad and need a replacement unit. I try to download an already purchased app from the app store to my new unit but Apple or the developer removed the app.

Can I backup purchased apps to my external HDD so I will always have them... if Apple or the developer removes them from the app store?

Just download them to iTunes and don't delete them.
