Recently I sold my iPhone 4s and before I did, I backed up everything using iTunes. I want to upgrade the HDD on my PC and wanted to know if there was a simple way to back up the back up data that iTunes did.
I Tried searching but could not find this info.
Does anyone know how to do this?

I don't think you can simply backup the backup data and then expect it to work on the next sync, as most likely your device will not be recognized by the new installation of iTunes and so on.
In short, it's always a PITA.
If you don't have a way of backing up the entire drive and then restore from that, then you'll need to "migrate" your iTunes library to the new disc, to avoid issues.
Apple has an article about it but you can always google "Migrate iTunes Library".
