How do I delete the Cell Phone & iTunes data off my iPhone?

I have an iPhone 3g that i am putting on Ebay because it DOES NOT read sim Cards.

I have my personal contacts on this phone and the iTunes and App Store log in Email Etc... How can I delete this date with out losing my Jailbreak & Unlock?
Again: MY PHONE CANNOT READ MY SIM CARD and even when the sim card is out of the phone the contacts are still on it!
I'm on an Unlocked 4.2.1 Firmware with an iPad Baseband! It is also jailbroken with Cydia..

The contacts are stored on the phone, not the SIM. If you want to keep the jb and unlock, restore with custom firmware. That'll erase everything and re-jb the phone. You have to do that anyway because of the ipad bb.

Settings -> General -> Reset -> Erase all Content and Settings

Do I SHIFT click restore in iTunes? Or do I do it through RedSnow or PwnageTool? Please be specific Im a little slow..

The OP wants to keep the jb&unlock--not lose it. Did you even bother to read the post? If you're only going to post bad advice, then don't bother.

I use option+restore to use the custom firmware.
