How do I do a fresh restore with a new 2.1?

Here is what I'd like to do, if possible.

Get rid of the 2.1 SW in my phone, and from itunes, download a fresh version of 2.1, get it into my phone, but not lose my contacts, music, pictures etc.

If possible, exactly how do I do it, thanks!

If you want to keep stuff on it that wouldn't exactly be a fresh start now would it?

Make sure you have your contacts backed up to your computer or MobileMe (a great service once they got it running) then plug in your iPhone and click restore, it will restore it from a copy 2.1 (no you don't need to download a new copy, if there were something wrong with yours iTunes would know) and then once that's done it will ask if you want to restore your phone from a backup, click yes, and wait an hour or two as everything will be back as it was.
