I own the new iPad Air 2 and running latest version of iOS 8

I seem to remember, on my older iPad, that whenever a new notification arrived -- be it email or otherwise -- the iPad would light up from standby and display that notification.

This feature would be great to have when I am in a room, watching television, and have the iPad on a nearby stand.

Is there a specific setting to make that happen?

Settings->general-> accessibility-LED flash for alerts on

That shouldn't work as the Air 2 doesn't have an LED flash. It does work on the iPhone as the iPhone has the flash to function for it.

Do you mean you just want the screen to light up and show the notification as it comes in?

Just go to the notification centre settings and make sure the notification are set to appear on home screen
 
Aaah, okay.

But the iPhone 6/6 Plus does have a notification LED flash?
