I see "all from my mac" and "all mobile me" but then I also have something called "gmail global address list" even though I have contacts turned off for my gmail exchange account. ARGH!!!!!!! I ONLY want the mobileme ones ... ???

I have a Gmail account set up as an Exchange account, too, and I also have the "Gmail global address list."

Not sure there's anything to be done at the moment to remove/hide that. Seems like it's there by design, i.e., a corporate address book but not synced to the phone (unlike the contact options in the settings you mentioned).

Just select the All Mobile Me" list.
 
If you setup as exchange, you will see that group even if not actively synced. If it really bothers you and are ok without push, setup your gmail as IMAP.

The "Google Global Address List" is just a search box. Ignore it.

(You also get a separate "Global Address List" for each google account that you access via exchange.)
