I've recorded video but it only let's me send it to YouTube (which compresses the heck out of it) send it by email, which compresses the heck out AND DOWN RES the video of it until it's now longer 720p, or MMS it.

I want iTunes to pull the video off my iPhone when it syncs? Why the heck does it not do that? How in the world do I get my video on to the computer?

If you have mac ImageCapture works just fine. On windows I think the phone should show up as a camera in my computer.
 
I got iPhoto to pull the video off. Then I guess drag and drop into iTunes?? Not sure.
 
I would think so. Then make sure that the movie section is set to sync on your iPhone settings when you plug it into itunes.
 
If you got as far as seeing your movie as a pic in iPhoto, you're halfway there. Now open iMovie and click on 'iPhoto Videos' in the event library. There are your movies! From there, you can edit and export to all the formats supported by Quicktime.
 
Image Capture

Image camera does not work if you have large vides. I pulled our christmas video off the phone that was 3.7GB. It is all messed up and the default was on image capture that deleted the video from my phone. The fact that Apple has not added this feature to iTunes is really kind of sad.

It is easy to be done on a Mac using the built in Mac software Image Capture

If you are using windows then connect it to the PC and then the iPhone should appear in your iTunes library and it should also appear in your My computer section as a Camera

If you are running iOS 5 you could configure iCloud and then wirelessly sync your videos and pictures to iCloud and then access them from anywhere via the iCloud website at www.icloud.com
-> Option 3 is only valid for the first 5 GB
 
Use FTP

Download Cyberduck. Other FTP software will be similar.

Go into the wifi settings on your phone.
click on your network.
write down the IP address

Open Cyberduck
click on the open connection button
In the dropdown menu go to SFTP (SSH File transfer protocol)
In the server field enter your IP address
Port is 22
Username is "root"
there is no password

Once connected you'll see "Library" and "Media"
Above that you'll see /private/var/root
click that dropdown menu and navigate to the hard drive symbol that has "/" next to it.
You'll now see 18 folders.

Navigate to var/mobile/media/DCIM
Here are all your images and video


You can set a bookmark to this location so you're always just a click away.
 
This is how i get my images/video I shot with my iPhone.

Mac: Image Capture
Just drag to Desktop

Windows: Go to My Computer and the iPhone will show up as a camera.
Drag and drop as well.
