How do I know if unlock worked?

JB 3G @ 3.1.2 on 04.26.08 baseband unlocked with Ultrasnow. It installed fine and rebooted. Is there anyway to check that the unlock is working besides inserting a new sim? Or is it just one of those things where if it installs, it works?

As long as you have ultrasn0w installed, and you are receiving a cell signal, its working.

You'll need the new sim, and that it is on a different GSM carrier. For example, if you have an iPhone from ATT that's unlocked, and you swap the ATT sim card for a Telstra sim card (Australia), and you get a signal while you're in Australia, you're good.
