I just loaded XP onto my new MacBook via Boot Camp, but I'm a little stuck here, how do I right click?

On OSX, it's as easy as tapping the touchpad with two fingers, but that doesn't seem to work under XP? (Oddly, double finger scrolling does work though).

Is this a bug/issue or am I missing something?

No.

Your drivers are installed properly.

You cannot even single finger tap to click, so you cannot double finger tap to right click.

The way to right click is to put two fingers on trackpad, then press the trackpad button.

You wouldn't happen to know if there's a way to change this would you? I've gotten used to the two-finger-tap.

To the best of my knowledge, there is still no way to tap click in Windows on a Mac... this is a standard thing on pretty much every other laptop... maybe Apple is doing it to punish your for using Windows :)
