how do I save my garageband stuff into mp3 format?

Simple but not obvious. Choose File > Export to iTunes, and it comes up in your iTunes library. To get it out of iTunes and as a file, choose File > Export.
Go to your iTunes preferences, and the Import section and change "AIFF Encoder" to "MP3 Encoder". You can also select the desired quality there.
