All my external hard drives are hooked to may Mac Mini running Mojave. Often I am in the other room on my Macbook Pro and want to quickly search those external drives for a file I'm looking for. I notice that in the sidebar of my finder Mac Mini is available as an option, but when I selected it and search I don't ever get any results. My assumption is that it's not even searching that machine. Is there a way I can get it to search that machine and the drives hooked up to it?

You'd need to find some way to add your external HD's to the Spotlight search engine.
Or, what I use, and it works well for all my search needs is an App called "Find any File".
It will search all drives connected or just the drives you specify, and allows you to perform most actions on these files.

Since I discovered FAF some years ago I seldom use Spotlight anymore.
