With WatchOS3 we had the option to add apps to the dock, which would (more) frequently automatically update. This would help the boot time of those apps.

In WatchOS4 we now have a recent dock which I actually prefer. However, I would want to have a few (probably not all 10 most recent) apps to automatically update.

How do I configure auto-updating apps while maintaining the recent dock?

I don't even use 10 different apps on my Watch, so most recent would suffice. Do you use more than 10?

You have a choice of either it showing the most recent (which are also updated in the background and kept in memory) or your favourites which you can then also set the order of. Cant have both im afraid.

Ive gone with favourites so I can develop muscle memory about the order of my apps. Recent is nice but one minute my dark sky is at the top, then in the middle. I like the order.
