how do I set up email folders for Iphone4

What kind of email account do you have? POP, IMAP, Exchange, etc.
Do you want to save/archive the emails on your phone (not a good idea) or your computer?

Yep. You should get yourself an account using IMAP (it's an option with gmail and Google Apps).
