When my neighbor's microwave runs, my macmini gets kicked off my wireless network. That's not a big deal to me, however, I then have to manually re-select my wireless network to reconnect.

How can I tell the mini to simply keep trying to reconnect automatically?
 
Try changing the channel from whatever it is to another one, and also try enabling interface robustness. It seems like it might be a EM interference problem.

ditto what he said. remember theres alot of channels that can be selected on your routers interface so it might take some experimenting. channel 8 worked for me, but i had a cordless phone interference problem. you might try googling for what people used for a channel with your similar problem to have an educated guess where to start anyway
