This box pops up every few days and makes the icon on my dock bounce until I deal with it.

But my only option is to download it or to not download it - and if I don't, it'll pop up again in a few days.

Other than updating, how can I stop it?

You should update Adobe Reader/Acrobat. Like Adobe Flash Player, Acrobat is most often updated to fix security issues. Don't ignore the updates.
 
I update it, partly to get rid of the reminders but also to make sure there's no vulnerabilities.
 
Reader has had some really bad vulnerabilities, it's not good to ignore updates on it.

That said, are you sure you actually need it? For many OS X users it's completely unnecessary, despite many websites telling users otherwise whenever there's a hint of a PDF around...

If you do need Reader, you should keep it up to date. If you don't, then uninstalling it is obviously the best solution.
