I have hebrew fonts installed, but they are all coming out as english!!!! ???
 
I think you can only use the one standard hebrew font that you get when you change the input language to hebrew. Granted, it's a very boring font, but that's what you get. Not a whole lot of hebrew mac support.
 
If you are doing more than a couple words now and then in Hebrew, then consider using Mellel. The Hebrew support is great including directional changes (not just a word, but sentences and paragraphs, which you can change on the fly), etc. There are many fonts available that work, my favorite Ezra from SIL, SBL Hebrew, and check out the Mellel forums for those who write in Hebrew every day, Mellel forums (look for user: jannuss)
