I was cleaning out my closet and found some applecare CD's that was purchased with my mac mini and 20 inch ACD. I have the original recipt that shows I purchased Applecare but did I need to do something with the CD's? Or is my applecare valid already for the my mac mini and ACD?

Yeah I'm newbie...

ShadyMac you can check if Applecare has been registered by going to the apple website and the support page. On the right hand column go down to the section "About your Apple product" and enter the serial number of your computer.

If not, check in the box that came with your Applecare, containing those cds plus a booklet, there will be a serial number. You can register online but I suggest that you phone them with the details because I think that your monitor will be covered as well if you bought them at the same time. And then be sure to check the website again to make sure it has been done.
