I did a search and I'm still not quite clear how this works.

I need to wipe all data from my iPhone 2G. Easy enough. From what I understand I can use the "wipe all" function in version 2.0 of the software. It can also be done by restoring the iphone. Correct?

Now my big question. What happens to the Sim card? Is there data stored on there as well that needs to be deleted?

The phone has been removed from my AT&T account but the Sim card is still in the phone. I would like to sell the phone but want to make sure everything is wiped clean. I also plan to jailbreak and unlock the iPhone before the sale to increase the value.

Don't include the sim card when you sell the phone. They can get their own. To wipe it completely "Settings > General > Reset > Erase all content & settings". For a 16GB phone, this should take about 2+ hours. If it doesn't, then it isn't really deleted.
